Pecan and apricot chocolate slice

I love creating raw sweet treats. When I am inspired to create something my mind has been bubbling away for a few days to a few weeks putting together different flavours and ingredients. This creation came about when I was at a networking morning and one of the participants asked if something else could be used instead of the dates for the desserts as she couldn’t eat dates. Figs, apricots and prunes are other ingredients that could be used to make the bases of the pies, tarts and cheesecakes however they would also change the overall flavour of the recipe. So I decided to create a slice with one of these ingredients and not as a substitution. As we had apricots in the cupboard that was the place to start. The apricots that I have on hand are sun-dried and not dried with sulphur, so are not the brightly orange coloured ones that are in most shops. They taste sweet but do not have the under pinning bitterness that the I find the sulphur dried apricots have. Also who wants to be consuming sulphur? So here is my Pecan and Apricot Chocolate Slice.pecan-apricot-chocolate-slice


  • 2 cups of pecans
  • 1 cup of sun dried apricots
  • juice of 1 orange
  • 1/4 cup + 2Tbs raw cocoa powder
  • 1/2 cup quinoa flakes
  • 1 Tbs pure maple syrup
  • 1/2 cup hemp seeds


  1. Soak the apricots in the orange juice until they have absorbed most of the orange juice. I had mine soaking for most of the day
  2. In a food processor, blend the pecans until the are a fine flour consistency
  3. Add raw cocoa powder and quinoa flakes to the food processor and pulse to mix the ingredients
  4. Add maple syrup, soaked apricots and any remaining orange juice to the food processor and process until the mixture is a dough consistency
  5. Place dough in a bowl, add the hemp seeds then knead together.*
  6. Press dough into a 20cm x 20xm slice tin
  7. Place in the freezer to set
  8. Once set cut into slices or squares. These can be stored int he freezer.

* The hemp seeds can be added at step 3 and pulsed with the cocoa and quinoa flakes, I just like using my hands so love the kneading part. If you do not have hemp seeds try sesame seeds or slightly ground sunflower seeds
